Ingredients:
- 4 boneless, skinless chicken breasts
- 4 medium-sized potatoes, diced
- 3 tablespoons olive oil, divided
- 2 lemons, juiced and zested
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions:
Preheat the oven to 400F 200C
In a bowl, mix 2 tablespoons of olive oil, lemon juice and zest, minced garlic, dried oregano, dried thyme, salt, and pepper
Place the chicken breasts in a baking dish and pour the lemon mixture over them, ensuring they are evenly coated
Let marinate for 15-30 minutes
In another bowl, toss the diced potatoes with the remaining tablespoon of olive oil, salt, and pepper
Spread the potatoes evenly on a baking sheet lined with parchment paper
Place the marinated chicken breasts on top of the potatoes in the baking dish
Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender, flipping the chicken halfway through
Garnish with fresh parsley before serving
