Vegan Vanilla Chocolate Sandwich Cookies



These Vegan Vanilla Chocolate Sandwich Cookies are a delightful treat for any occasion. They are made with almond and coconut flour, sweetened with maple syrup, and filled with vegan chocolate chips.

Ingredients:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup cocoa powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup vegan chocolate chips

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a large bowl, combine almond flour, coconut flour, cocoa powder, baking soda, and salt

Add melted coconut oil, maple syrup, and vanilla extract to the dry ingredients

Mix until well combined

Fold in the vegan chocolate chips

Scoop tablespoon-sized portions of the dough and form them into cookies

Place them on the prepared baking sheet

Using a fork, gently flatten each cookie and create a criss-cross pattern on top

Bake for 10-12 minutes, or until the cookies are set

Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely

Once the cookies are cool, spread a dollop of vegan chocolate spread on the bottom side of one cookie and sandwich it with another cookie
