Ingredients:
- 2 medium zucchinis, thinly sliced
- 1/2 red onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup roasted peanuts, crushed
- 1/4 cup coconut milk
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1 tablespoon honey
- Salt and pepper to taste
Instructions:
In a large mixing bowl, combine the sliced zucchinis, red onion, and red bell pepper
In a separate small bowl, whisk together the coconut milk, lime juice, olive oil, honey, salt, and pepper to create the dressing
Pour the dressing over the vegetables in the large bowl and toss to combine thoroughly
Add the chopped cilantro and parsley to the bowl and gently toss again
Sprinkle the crushed roasted peanuts on top of the slaw for added crunch and flavor
Refrigerate for at least 30 minutes to allow the flavors to meld together
Serve chilled and garnish with extra cilantro if desired
