Fudgy Chocolate Chip Zucchini Brownies with Chocolate Chip Frosting



A delicious treat, these fudgy brownies subtly include zucchini for extra moisture and nutrition. These are the ideal treat for any chocolate enthusiast, topped with a decadent chocolate chip frosting.

Ingredients:

  • 1 1/2 cups grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions:

Preheat your oven to 350F 175C and grease a 9x9-inch 23x23 cm baking pan

In a large mixing bowl, combine the grated zucchini, all-purpose flour, unsweetened cocoa powder, granulated sugar, brown sugar, vegetable oil, eggs, vanilla extract, baking soda, and salt

Mix until well combined

Fold in the semi-sweet chocolate chips into the batter

Pour the batter into the prepared baking pan and spread it evenly

Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs don't overbake to keep them fudgy

Remove the brownies from the oven and let them cool completely in the pan on a wire rack

While the brownies are cooling, prepare the chocolate chip frosting
