Ingredients:
- 1 1/2 cups grated zucchini
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
Instructions:
Preheat your oven to 350F 175C and grease a 9x9-inch 23x23 cm baking pan
In a large mixing bowl, combine the grated zucchini, all-purpose flour, unsweetened cocoa powder, granulated sugar, brown sugar, vegetable oil, eggs, vanilla extract, baking soda, and salt
Mix until well combined
Fold in the semi-sweet chocolate chips into the batter
Pour the batter into the prepared baking pan and spread it evenly
Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs don't overbake to keep them fudgy
Remove the brownies from the oven and let them cool completely in the pan on a wire rack
While the brownies are cooling, prepare the chocolate chip frosting
